Guests must be comfortable and confident with the dining experience
they expect to receive. The atmosphere must be consistent
throughout the entire guest’s stay from the decorum,
to the service, to the food, and the overall image. This is
extremely important when developing a strong reputation and
guest loyalty.
SERVICE
The foundation of service is having a passion for guest needs
– hospitality. Upon this is laid the building stones
of knowledge, technique, and salesmanship. The service style
is dictated by the restaurant’s style – casual,
lounge, pub, fine dining. Servers use their own personalities
to create a unique yet consistent service experience.
CUISINE
A balanced menu uses specials to promote the culinary artistry
of the restaurant, and has a core menu offering guests familiar
house favorites. Consistency is once again paramount. Consistent
style, consistent quality, consistent preparation, and consistent
timing, all reflecting the style and image of the restaurant,
are essential.
TEAM
No segment of the restaurant, Service or Production, is more
important than the other. The restaurant team is similar to
a sports team. All players must work in tandem for the common
goal – a successful restaurant. Management creates this
unified restaurant team.
IMAGE
The image is the spirit and soul of the restaurant. By staying
true to the image, a restaurant’s style will be consistent
from décor, to uniforms, to menu covers, to cuisine,
to service style, to music and even to the guest. Understanding
this image is paramount to maintaining a universal theme when
developing new products, a public relations campaign, and
special events.
